A Study on the Content of Amino Acids and Fatty Acids in a Native Pumpkin Seed


Abstract
A study was made of a native pumpkin seed collected at a seed store in Seoul to evaluate the nutritional value at the beginning of September, 1980.
This analyzed a native pumpkin seed into Amino acids and Fatty acids to develop higher quality of protein and fat resources.
The results are as follows:
1. A native pumpkin seed contains crude protein 35. 33%, crude fat 47.72%, crude ash 5.49%, crude fiber 1.53% and nitrogen free exact 3.17%.
2. The content of Amino acids are Glu. 7.0241%, Arg. 4.9142%, Asp. 2.705200, Leu. 2. 1810%, Phe. 1.7125%, Gly. 1.6307%, Val. 1.4692%, Ala. 1.3845%, Ser. 1.2873%, Ileu. 1.0851%, Lys. 1.0322%, pro. 0.9853%, Tyro. 0.9105%, Thr. 0.7324¡Æ0, His. 0.6451 and Met. 0.4727%
3. The content of Fatty acids, are Palmitic acid 9. 59%, Stearic acid 3.77%¢¥, Oleic acid 13.46% Linoleic acid 20.85% and Linolenic acid 0.05%
